Almond longan jelly
i try my best to cook at home as i use stevia or monk fruit sugar,omega eggs,greek yoghurt etc which are healthy options.juns memory of good food is remarkable as for xmas he didnt like to eat duck le orange but wanted stuffed roast chicken i cooked 10 years ago.i recreated exact recipe h he had food orgasm.for filling i use chinese shitake mushroom,chestnut,dried oysters,red dates,dried tangerine peel,candied winter melon,chinese lap cheong n mixed peas.i used shao xing wine.i made a brown sauce which is western but the fusion worked well.jun licked the plate clean.ate ALl the roasted sweet potato,brocolli n pumpkin.
today he requested an old favourite at dim sum restaurants almond,longan jelly.hope it turns out well.lately my fingers joints swell n ache from overuse.i make all the cakes and bread manually as im too lazy to unpack the equipment from the boxes and wash so many things.but repetitive stress injury cause carpal tunnel syndrome.painful
todays almond jelly is a recipe for DISASTER.i didnt follow the recipe and .i used a carton of chilled almond milk,used agar instead of gelatin.the jelly was not snow white but muddy biege,the jelly not wobbly but firm.next time i use fresh full creammilk,natural almond extract n gelatin.this jelly is yucky firm n has ugly colour.a big failure.
